Justin Livingston, the company's VP of franchise development, argues the move is driven by the region's unique combination of commuter traffic and lower overhead costs compared to the expensive coastal corridors or the chain's home state.
Birdcall Bets on the Midwest Over Coastal Markets
While major restaurant chains pour capital into the hyper-competitive real estate markets of New York and California, Colorado-based Birdcall is charting a different course. The 17-unit fast-casual franchise plans to open nearly 100 new locations across the Midwest over the next five years, prioritizing affordability and community density.

Birdcall positions itself in the elevated fast-casual chicken segment, favoring large, 125-to-150-seat footprints even as many industry rivals downsize. The brand is actively recruiting experienced multi-unit operators to fuel this growth. The strategy is already taking root; shortly after announcing the regional shift, the company secured a five-unit development deal in Indianapolis with franchisee Nikunj Patel.
