With 26 new dishes and 15 Asian-inspired beverages, wagamama is attempting a significant pivot in the American market. The brand, now headquartered in Tampa, is moving away from its traditional communal-only focus to prioritize customization and expanded dining categories, responding directly to shifting expectations for adventure and personal choice.

The menu expansion marks the most aggressive change for the pan-Asian chain in its three-decade history. Beyond the addition of shareable items like Korean BBQ meatballs and roti canai, the restaurant is introducing specialized categories such as bao bun tacos and wagyu sliders. These additions aim to bridge the gap between casual lunch stops and late-night cocktail outings.

Stephen Judge, CEO of wagamama USA, described the evolution as a direct response to guest feedback demanding more flexibility. The overhaul includes a revamped beverage program featuring signature cocktails like the Shichimi Old Fashioned and a new line of non-alcoholic drinks. These changes are currently being rolled out alongside physical store renovations, beginning with the brand’s Tampa location, which now features dedicated bar areas and private dining spaces designed to better accommodate the social atmosphere modern diners seek.
