Developed by the Madrid-based firm Livit, the new design replaces rigid floor plans with a flexible "kit of parts." This approach allows operators to customize layouts based on specific market needs while retaining signature elements like the peninsula-style bar and large-scale TV walls. The transition follows successful tests in smaller, inline spaces like the company's location at The Battery in Atlanta, which proved that the brand’s full menu and hospitality experience could function effectively in a more compact environment.
Walk-On’s Sports Bistreaux Unveils Compact Prototype for 2027 Expansion
Shrinking its footprint by nearly half, Walk-On’s Sports Bistreaux is pivoting toward a modular design to accelerate growth. The restaurant chain, known for its sprawling locations, unveiled a new 3,500 to 4,500-square-foot model intended to provide franchisees with greater site flexibility while maintaining the brand's high-energy sports-viewing atmosphere.

The inaugural site for this next-generation model is set to open in early 2027 on Perkins Road in Baton Rouge. Spanning roughly 3,688 square feet with seating for 125 guests, the location will feature operational upgrades, including high-efficiency clamshell grills to streamline kitchen production and dedicated cubbies for third-party delivery services. CEO Brandon Landry emphasized that the design aims to preserve the company's community-focused identity through localized decor and integrated lounge spaces, ensuring that the smaller scale does not sacrifice the brand's established social appeal.
