At Sandals Montego Bay, the expansion includes the debut of Buccan, a solid-fuel, family-style restaurant designed for communal dining. The property will also feature the Bay Roc Rum Bar, which pays homage to the resort's 1950s origins through curated vinyl collections and local artwork, alongside the new Parisol Beach Club.
Sandals Resorts Overhauls Culinary Programs at Three Jamaican Properties
Sandals Resorts is executing a 200 million dollar transformation across its Jamaican portfolio, introducing hyper-local dining concepts and immersive bar experiences at Sandals Montego Bay, Sandals Caribbean Cay, and Sandals South Coast to deepen the connection between international guests and the island's culinary heritage.

Sandals Caribbean Cay centers its transformation on Suppa, a home-style restaurant modeled after traditional Jamaican Sunday dinners. This concept is paired with the Keynote Rum Bar, serving as an intimate parlor-style entrance to the dining area. Meanwhile, Sandals South Coast will introduce Butch’s Island Chop House and a specialized martini bar, with a unique second-story B-Side Rum Bar scheduled for arrival in early 2027. Across all three locations, the brand is rolling out its BLŪM coffee shops to showcase Jamaica’s Blue Mountain coffee. The resorts are slated for staggered reopenings, starting with South Coast on November 18, 2026, followed by Montego Bay and Caribbean Cay in December.
